Marilyn's Applesauce

Any apple variety works well with this recipe.  I like to use McIntosh apples as they soften very quickly when cooked.  And if you use a mixture of apples then all of the flavours mix well together. 

Peel and core the apples
Cut them into chunks
Put them into a pot and cover them with water
Simmer at a low heat
Keep an eye on the apples and stir often
When they soften, mash them into small pieces
Add more water as required
Continue to simmer them until it looks like applesauce
Add sprinkle of cinnamon or nutmeg and a pinch of sugar (if required)

Serve warm with vanilla ice cream

This applesauce freezes really well.
